Kongguksu is a summer dish made from pureed soybeans and noodles. It’s light, refreshing, and excellent for heart health, especially in older adults.
Ingredients:
- 1 cup soybeans (soaked overnight)
- 1 cucumber (julienned)
- 200g wheat or buckwheat noodles
- Salt to taste
- Ice cubes (optional)
Preparation:
- Boil soybeans for 10 minutes, peel skins, and blend with cold water.
- Cook noodles and rinse in cold water.
- Pour soybean broth over noodles.
- Top with cucumber slices and serve cold.
