Kimchi is Korea’s signature dish made from fermented cabbage and radish with chili, garlic, and ginger. For people over 50, it is rich in probiotics, fiber, and vitamins that improve gut health and boost immunity.

Ingredients:

  • 1 medium Napa cabbage
  • 1/4 cup sea salt
  • 5 cloves garlic (minced)
  • 1 tbsp grated ginger
  • 2 tbsp Korean chili flakes (gochugaru)
  • 2 tbsp fish sauce (optional)
  • 1 medium carrot (julienned)
  • 1 bunch green onions (chopped)

Preparation:

  1. Cut cabbage into quarters, soak in salted water for 2–3 hours.
  2. Rinse thoroughly and drain.
  3. In a bowl, mix garlic, ginger, chili flakes, fish sauce, and carrots.
  4. Rub mixture between cabbage leaves.
  5. Place in an airtight jar and leave to ferment at room temperature for 2–3 days.
