Samgyetang is a traditional Korean soup made with a whole chicken, ginseng, and medicinal herbs. It is known as a strengthening dish for elderly people because it improves energy and strengthens immunity.

Ingredients:

  • 1 small whole chicken (Cornish hen preferred)
  • 1/4 cup glutinous rice (soaked)
  • 3 garlic cloves
  • 2–3 fresh ginseng roots
  • 5 jujube dates
  • 1 piece ginger (sliced)
  • 6 cups water
  • Salt and pepper to taste

Preparation:

  1. Stuff the chicken with soaked rice, garlic, and dates.
  2. Place chicken in a large pot with ginseng, ginger, and water.
  3. Boil for 1 hour until chicken is tender.
  4. Season with salt and pepper before serving.
